Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the chops

  1. Trim and shape the pork chops into a crown.

  2. Mix the sausage meat and bread crumbs, then moisten with the egg.

  3. Fill the center of the crown with the mixture.

Cook the onions

  1. Fry the onions in butter until light brown.

  2. Cook the fried onions in stock until tender.

Roast and serve

  1. Roast in a moderate oven at 350°F (175°C) for 1 hour and 45 minutes.

  2. Place some onions in the center of the pork and use the rest as a garnish.

  3. Serve with Espagnole sauce.

Bread crumbs
