Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Combine the crumbled bread, onion, celery, salt, pepper, and melted butter in a bowl. Mix thoroughly.

Roll and bake

  1. Spread the filling on each piece of tripe and roll them up, securing with a toothpick.

  3. Bake at 400°F (200°C) until golden brown.

Serve

  1. Serve hot or cold.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Stale bread
Soaks up butter and forms the bulk of the filling, giving it body.
Melted butter
Adds fat and moisture to the filling and helps the rolls brown in the oven.
Tripe
Serves as the wrapper that holds the filling in rolled shape.

The step that matters

Rolling the tripe. Tripe pieces must be rolled snugly and secured well with toothpicks so the filling stays inside during baking. Loose rolls can open and let the filling spill out and dry.

Swap the onion

How well each one fits the dish's main ingredients (bread, celery, pepper, butter):

  1. Carrotfits better
  2. Capsicumfits better
