Roast Turkey with Oysters

Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the turkey

  1. Singe and clean the turkey, then wipe it dry.

  2. Mix the oyster cracker crumbs and bread crumbs in a bowl. Stir in the liquor from the oysters, melted butter, and beaten eggs.

  3. Add the oysters and season to taste, then stuff the turkey loosely with the mixture.

Roast and serve

  1. Wrap the turkey in buttered paper and roast in a hot oven at 400°F (200°C).

  2. Baste often with melted butter.

  3. About 10 minutes before removing, take off the paper, sprinkle with flour and salt, and baste with butter to brown.

  4. Once cooked, place the turkey on a hot dish.

  5. Prepare brown sauce with the liquid from the dripping pan and serve it around the turkey.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Turkey
Forms the main body of the dish, and its skin browns during roasting.
Oysters
Add a briny, savoury flavour to the stuffing.
Butter
Adds richness and moisture, and helps the skin brown when basted.
Eggs
Bind the stuffing so it holds together when packed into the bird.
Oyster cracker crumbs
Form the base of the stuffing and absorb the liquids.
Bread crumbs
Add bulk to the stuffing and absorb the liquids.

The step that matters

Stuffing the turkey loosely. Stuffing packed tightly expands as it heats and slows heat reaching the centre, so the bird may cook unevenly. Leaving room lets the stuffing cook through and heat circulate.
