Escalloped Chicken

Ingredients

Directions

  1. Boil the chickens until cooked, then let them cool.

  2. Remove the meat from the bones, discarding skin and gristle, and slice the meat.

  3. In a double boiler, cream the butter and flour together.

  4. Add the milk and enough of the chicken broth to make 1 quart of gravy.

  5. Season the bottom of a baking dish with salt.

  6. Layer the chicken, bread crumbs, and sauce in the dish, repeating until all ingredients are used.
