What each ingredient does

Chicken
Provides the main body of meat, becoming tender through long simmering and holding its shape when cubed.
Sweetbreads
Adds a soft, tender texture and rich flavor as the second meat in the salad.
Blanched almonds
Add crunch and a nutty flavor that contrasts with the soft meats.
Pine nuts
Add crunch and a buttery, nutty aroma when lightly browned.
Mayonnaise dressing
Adds fat and moisture that binds the salad and carries the seasonings.
Celery
Adds crisp texture and moisture to the salad.

The step that matters

Picking the sweetbreads and discarding the membrane. Sweetbreads have a thin membrane that stays tough and chewy when cooked, so it must be removed while the meat is still cool and firm enough to handle cleanly.
