What each ingredient does

Sweetbreads
Provide the tender, meaty bulk of the salad.
Oysters
Add a briny, savory flavor that stands out against the mild sweetbreads.
French dressing
Adds acidity and seasoning as the marinade for the sweetbreads and oysters.
Mayonnaise
Adds richness and moisture, binding the salad together.

The step that matters

Parboil the oysters briefly. Prolonged heat toughens oyster flesh and makes it rubbery and shrunken, so they should only be parboiled until just firm, then cooled before cutting.

Swap the lettuce

How well each one fits the dish's main ingredients (oyster, cucumber):

  1. Horseradishfits better
  2. Cauliflowerfits about as well
  3. Lettucethe original
  4. Shallotfits about as well

Fit is the average pairing score against oyster, cucumber. Candidates are from the same food group and used in at least 100 recipes.
