Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chestnuts
Form the main body of the puree, giving it its starchy, soft texture once cooked and sieved.
Butter
Adds fat and richness, helping the puree become light, smooth and creamy.
Milk or cream
Adds moisture and a softer, silkier texture to the puree.

The step that matters

Rub the chestnuts through a fine sieve. Cooked chestnuts must be pushed through a fine sieve to break down their fibres and starch so the puree is smooth rather than grainy or lumpy. Chestnuts that are not fully tender will resist sieving and stay gritty.

Swap the white pepper

How well each one fits the dish's main ingredients (chestnut, butter, milk):

  1. Cinnamonfits better
  2. Nutmegfits better
  3. Sagefits better
  4. White pepperthe original
