Why it works: Potato and chicken are a kitchen classic. They rank in the top 7% of all ingredient pairs, and cooks put them together in 2,756 recipes. Both carry (z)-4-decenal, which smells green, must. The science ↓
Milanaise Potatoes
Ingredients
Directions
The book says “a very hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.
Peel and boil the desired amount of potatoes until tender.
Press the potatoes through a ricer into a heated bowl.
Whip the potatoes with a fork, gradually adding boiling chicken stock until creamy.
Season with coarse sea salt and white pepper.
Add enough whipped cream to achieve a consistency that can be beaten with a Dover egg beater.
Beat the mixture for five minutes.
Heap the mixture in a buttered baking dish.
Sprinkle with grated Parmesan cheese.
Brown lightly in a very hot oven at 400°F (200°C).
Serve immediately.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
