Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Form the bulk of the mixture and give the croquettes their soft, fluffy interior.
Butter
Adds fat for richness and a tender, moist texture inside.
Eggs
Bind the mixture together and form a coating that helps bread crumbs stick.
Bread crumbs
Create a crisp, golden-brown outer crust when fried.

The step that matters

Fry in deep hot oil until golden brown. If the oil is not hot enough, the croquettes absorb excess oil and turn greasy, while the coating can burn before the centre heats through. Steady hot oil sets the crust quickly and keeps the inside tender.
