Potatoes with Cheese Sauce

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the potatoes

  1. Boil the potatoes until tender, then mash them with hot milk and melted butter.

  2. Season with coarse sea salt and white pepper to taste.

  3. Whip the mixture until light and mound it in the center of a fireproof platter.

Shape and bake

  1. Smooth the sides with a knife and remove about 1 cup of potato from the center to create a cavity.

  2. Brush the inside of the hollow and the top and sides of the mound with beaten egg white.

  3. Place the platter in a 400°F (200°C) oven until very hot and lightly browned.

Fill and serve

  1. Remove from the oven and fill the hollow with cheese sauce.

  2. Sprinkle with bread crumbs and return to the oven for 5 minutes before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Form the bulk of the mound and give a soft, fluffy structure when mashed and whipped.
Butter
Adds richness and fat, giving the mashed potato a smooth, silky texture.
Milk
Adds moisture and softness, helping the mashed potato whip up light and smooth.
Egg white
Brushed on the surface, it sets during baking to form a firm, browned crust that holds the shape.
Cheese sauce
Fills the hollow with a rich, creamy centre that contrasts with the fluffy potato.
Bread crumbs
Form a crisp, golden topping when returned to the oven.

The step that matters

Brushing the mound with egg white before baking. Egg white sets when heated, forming a dry, firm skin that holds the mound's shape and browns evenly. Brushing it on too thinly or skipping it can leave the sides soft and slumping in the oven.

Swap the white pepper

How well each one fits the dish's main ingredients (potato, milk, butter, egg, cheese, sauce, bread):

  1. Nutmegfits better
  2. Capersfits better
  3. Parsleyfits better
  4. White pepperthe original
