Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the filling

  1. Cut the stem end from each tomato and scoop out the heart.

  2. In a bowl, combine the tomato pulp, bread crumbs, and crumbled cheese. Season the mixture with salt and pepper to taste.

Stuff and bake

  1. Fill the tomato shells with the mixture and replace the stem ends.

  2. Place the tomatoes in a roasting pan and bake at 400°F (200°C) for 20 minutes.

Serve

  1. Transfer to a hot platter and serve.

What each ingredient does

Tomato pulp
Adds moisture and tomato flavor to the filling, so it stays soft rather than dry.
Bread crumbs
Absorb liquid from the pulp and help the filling hold its shape.
Crumbled cheese
Melts and browns in the oven, adding richness and savory flavor.
