Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Cut a thin slice off either end of the hard‑boiled eggs so they stand upright.

  2. Halve the eggs and mix the yolks with the chopped meat, mustard, salt, pepper, and melted butter until smooth.

  3. Form the mixture into balls the size of the original yolks and place them in the egg white halves.

Bake and serve

  1. Pour white sauce over the filled egg whites.

  2. Bake in a 350°F (175°C) oven for a few moments and serve garnished with parsley.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Hard boiled eggs
Provide the whites that hold the filling and the yolks that form the base of the stuffing.
Finely chopped ham, chicken, or tongue
Adds savoury meat flavour and bulk to the yolk filling.
Melted butter
Adds fat, making the yolk mixture smooth and rich in texture.
White sauce
Adds moisture and creaminess over the filled eggs as they heat.

The step that matters

Mixing the yolks until smooth. Yolks mixed with melted butter and mustard must be blended fully; lumps of dry yolk stay grainy, while over-working is unnecessary. Smooth, evenly blended filling spreads and holds its shape better when shaped into balls.

Swap the mustard

How well each one fits the dish's main ingredients (egg, ham, butter, pepper, sauce, parsley):

  1. Shallotfits better
  2. Capsicumfits about as well
  3. Mustardthe original
  4. Carrotfits about as well

Fit is the average pairing score against egg, ham, butter, pepper, sauce, parsley. Candidates are from the same food group and used in at least 100 recipes.
