What each ingredient does

Eggs
Set into soft curds that give the scrambled filling its body and texture.
Mushrooms
Add savory, earthy flavor and moisture to the filling once cooked down.
Butter
Adds richness and fat that carries flavor and keeps the eggs tender.

The step that matters

Stirring the eggs over low heat. Eggs turn from tender curds to dry, rubbery pieces if overcooked. Gentle heat and constant stirring set the proteins slowly, so the eggs stay soft and moist. Removing them while slightly underdone lets residual heat finish the cooking.

Swap the white pepper

How well each one fits the dish's main ingredients (mushroom, butter, onion, parsley, egg, bread):

  1. Thymefits better
  2. Garlicfits better
  3. Capersfits better
  4. White pepperthe original

Fit is the average pairing score against mushroom, butter, onion, parsley, egg, bread. Candidates are from the same food group and used in at least 100 recipes.
