What each ingredient does

Cucumbers
Provide the crisp, watery body and fresh flavour that make up the sandwich filling.
Mayonnaise
Adds fat and creaminess, and helps the slices adhere to the bread.
Unbuttered bread
Provides a neutral, absorbent base that holds the filling without added fat.

The step that matters

Drain and dry the slices. Cucumber is mostly water. If slices stay wet, moisture soaks into the bread and makes the sandwiches soggy, so they must be dried thoroughly before assembly.
