Pineapple Jakdiniere

Ingredients

Directions

Prepare the pineapple

  1. Cut the top from the pineapple and set it aside for the cover.

  2. Remove the inside of the pineapple, discarding the core, and scoop out the juice and flesh without breaking the rind.

  3. Place the rind and the cover in a cool place.

Make the filling

  1. In a bowl, combine the pineapple flesh with sherry and mix in orange pulp, halved grapes, banana, or seasonal fruits.

  2. Add sugar to taste, then fill the pineapple rind with the mixture.

Serve

  1. Replace the cover and set the pineapple on a dish of cracked ice.

  2. Serve in champagne glasses.
