What each ingredient does

Granulated sugar
Provides sweetness and body to balance the citrus acidity and tea bitterness.
Orange juice
Adds bright acidity and fruity flavour.
Lemon juice
Adds sharp acidity that brightens the punch and balances sweetness.
Green tea
Adds mild astringency and a subtle herbal, bitter note.
Rum
Adds alcohol and aroma, carrying the flavour of the spirit through the punch.

The step that matters

Remove from heat before adding the tea and rum. Alcohol and delicate tea flavour are volatile and fade when boiled, and boiling green tea makes it bitter. Adding them off the heat keeps the aroma and avoids harshness.
