Fried Salt Pork

Ingredients

Directions

  1. Cut the salt pork into quarter-inch slices and remove the rind.

  2. If the pork is very salty, soak it in water to freshen it.

  3. Fry the pork slowly and evenly until it is dry.

  4. Serve the fried pork with baked potatoes and a white gravy made with the fat from the pork instead of butter.

  5. If there is excess salt in the pan, remove it before making the gravy.
