Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. In a bowl, mix the flour, cornmeal, baking powder, sugar, and salt.

  3. In another bowl, beat the egg and then add the milk and melted butter.

Mix and bake

  1. Combine the wet and dry ingredients until just mixed.

  2. Pour the batter into muffin tins.

  3. Bake for 25 to 30 minutes until golden brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

All-purpose flour
Provides the main structure that holds the muffin together as it sets.
Cornmeal
Adds corn flavor and a slightly coarse, tender crumb.
Baking powder
Releases gas in the batter so the muffins rise and become light.
Egg
Binds the batter and adds structure and richness as it sets.
Milk
Hydrates the flour and cornmeal and adds moisture to the batter.
Butter
Adds fat for tenderness and rich flavor.

The step that matters

Combine the wet and dry ingredients until just mixed. Stirring too much develops gluten in the flour, which makes muffins tough and tunnelled. Stop once no dry streaks remain; a few lumps are fine.
