What each ingredient does

Tomatoes
Form the main body of the salad; their flesh provides moisture and fresh, acidic flavour.
Cold dressing
Adds moisture and seasoning that coats the tomato slices and carries flavour.

The step that matters

Pour off the hot water and add cold water. Hot water loosens the skins so they slip off easily. Moving straight to cold water stops the tomatoes from continuing to cook and softening, keeping the slices firm and cool for serving.
