What each ingredient does

Grapes
Provide the juice, flavor, and natural sweetness that make up the drink.
Water
Helps extract juice from the grapes while they heat in the pot.

The step that matters

Bottling while scalding hot. Sealing the juice while it is still very hot heats the liquid and jars enough to drive out air and reduce microbial growth, helping the juice keep once sealed. Letting it cool before sealing risks spoilage.
