What each ingredient does

Currants
Provide the fruit flavor, acidity, and the natural yeasts that start fermentation.
Sugar
Adds sweetness and feeds the yeast, which converts it into alcohol during fermentation.

The step that matters

Leave the bunghole open or cover it with lace. Fermentation releases carbon dioxide, which must escape so the cask does not build pressure. The lace cover keeps out insects and debris while still letting gas pass.
