Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sugar
Provides sweetness and the sugars that feed fermentation, which sets the wine's alcohol level.
Egg white
As it cooks, it gathers impurities into a foam that can be skimmed off, helping clarify the liquid.
Oranges and lemons
Juice adds acidity and rind adds aroma and flavour to the wine.

The step that matters

Skim the foam while boiling. The egg white rises with impurities as the mixture boils. Removing this foam as it forms keeps the liquid clearer and cleaner-tasting before cooling and fermenting.

Swap the orange

How well each one fits the dish's main ingredients (sugar, egg, lemon):

  1. Orangethe original
  2. Vanillafits about as well
  3. Limefits less well
  4. Raisinfits less well

Fit is the average pairing score against sugar, egg, lemon. Candidates are from the same food group and used in at least 100 recipes.
