What each ingredient does

Strawberries
Provide the fruit flavor and pectin-bearing pulp that give the jam its body.
Sugar
Adds sweetness and helps the jam thicken and keep as it cooks down.

The step that matters

Boil slowly after adding the sugar. Sugar must dissolve fully before a slow boil, and the jam needs enough time at heat to reach a gel. Boiling too fast can scorch the sugar or make the jam set too firm.
