Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sour milk
Its acidity causes the milk proteins to curdle, separating solid curd from liquid whey.
Cream
Adds fat and moisture, giving the cheese a softer, smoother texture.
Butter
Adds fat for richness and a smoother mouthfeel.

The step that matters

Drain the curd until dry. Excess whey left in the curd makes the cheese watery and loose. Draining fully gives a firmer, more concentrated texture before the cream is added.
