Smothered Steak

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Prepare a dressing by mixing stale bread crumbs, coarse sea salt, butter, and suet if using.

  2. Moisten the dressing with water as you would for chicken dressing.

  3. Chop the onions and green peppers using a meat chopper.

Assemble and bake

  1. In a roaster or dripping pan, layer one piece of meat, then a layer of dressing, followed by the second piece of meat, and top with remaining dressing.

  2. Add hot water to the bottom of the roaster, cover, and bake at 350°F (175°C) for 1 hour or until done and nicely browned.

What each ingredient does

Round steak
Forms the main body of the dish, becoming tender as it cooks slowly in moisture.
Stale bread crumbs
Absorb moisture and liquid, forming a soft dressing layer between the meat pieces.
Butter
Adds fat and richness to the dressing, helping it brown and taste savory.
Onions
Add aromatic sweetness and flavor that builds into the braising liquid.
