Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

Make and shape the loaf

  1. In a bowl, mix the chopped veal, rolled crackers, butter, eggs, salt, and pepper until well combined.

  2. Shape the mixture into a solid loaf.

Top and bake

  1. Whip the egg whites and mix with some crushed crackers, then moisten with water.

  2. Spread the egg white mixture smoothly on top of the loaf.

  3. Place the loaf in a pan, set it in another pan, and bake for one hour.

Serve

  1. Serve cold.

What each ingredient does

Veal
Forms the main body of the loaf, giving it substance and a firm, sliceable texture.
Eggs
Bind the mixture together and help it set firm as it bakes.
Rolled crackers
Absorb moisture and help bind the meat so the loaf holds its shape.
Butter
Adds fat, which contributes richness and moisture to the lean veal.

The step that matters

Bake in a second pan. Setting the loaf inside another pan creates a gentler, insulating layer around it, so the lean veal cooks through without drying out at the edges.
