Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Green tomatoes
Provide the bulk of the pickle and firm texture once salted and drained.
Salt
Draws moisture out of the tomatoes, firming them before pickling.
Vinegar
Provides the acidity that preserves and sharpens the pickle.
Brown sugar
Adds sweetness and depth, balancing the sharpness of the vinegar.

The step that matters

Salting and draining the tomatoes overnight. Salt draws water out of the tomato slices through osmosis. Thorough draining removes that liquid so the pickles stay firm and the brine is not diluted.
