Directions

Make the filling

  1. In a stew-pan, combine the fish, cream, anchovy sauce, mustard, walnut catsup, pepper, and salt.

  2. Heat the mixture over medium heat, stirring occasionally until nearly hot, but do not let it boil.

Bake and serve

  1. Transfer the fish mixture to a deep dish or scallop shell and top with a generous amount of bread crumbs.

  2. Dot the top with small pieces of butter.

  3. Place in a Dutch oven before the fire and cook for about 30 minutes until browned.

What each ingredient does

Fish
Forms the main body of the dish, giving it substance and a flaky texture.
Cream
Adds moisture and richness, helping the fish mixture stay soft and cohesive.
Bread crumbs
Form a crisp topping that browns in the oven and adds texture.
Butter
Adds fat that melts over the crumbs, promoting browning and richness.
Prepared mustard
Adds sharp, pungent flavour that balances the richness of the cream.

The step that matters

Heat the mixture without boiling. Heating gently until just hot keeps the cream from curdling or separating and keeps the fish tender, while boiling can make the mixture grainy and tough.
