What each ingredient does

Clams
Provide the main savoury body and seafood flavour of the filling.
Bread crumbs
Absorb moisture and bind the filling, giving it a sausage-like texture.
Clam juice
Adds moisture and briny flavour so the filling reaches a moldable consistency.
Butter
Adds richness and fat that melts over the top, helping the crust brown.
Onion
Contributes savoury sweetness and aroma as it softens in the filling.

The step that matters

Adding clam juice. Clam juice must be added gradually until the mixture holds together like sausage. Too little leaves the filling crumbly and dry, while too much makes it wet and loose, so it may not hold its shape in the shells during baking.
