Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sugar
Provides sweetness and keeps the ice soft by lowering its freezing point.
Lemon juice
Supplies the sharp acidity that defines the flavor.
Lemon rind
Adds aromatic oils that scent the base during infusion.
Egg whites
Trap air when beaten, giving the frozen ice a lighter, smoother texture.

The step that matters

Gently stir in the beaten egg whites. Beaten egg whites hold air bubbles that lighten the texture. Stirring vigorously or too long knocks that air out, leaving a denser, heavier ice.

Swap the lemon
