Why it works: Sugar and flour are a kitchen classic. They rank in the top 15% of all ingredient pairs, and cooks put them together in 92,116 recipes. Both carry phenylacetaldehyde, which smells hawthorne, honey. The science ↓

Jelly Roll

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare the batter

  1. Preheat the oven to 400°F (200°C).

  2. In a bowl, beat the eggs and sugar until light and fluffy.

  3. Sift together the flour, baking powder, and salt, then fold into the egg mixture.

  4. Spread the batter thinly on a long baking sheet.

Bake and roll

  1. Bake until lightly golden, about 10-12 minutes.

  2. Remove from the oven and spread jelly over the hot cake.

  3. Roll the cake up tightly while it's still warm.

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Egg and flour barely smell alike, yet cooks put them together in 106,462 recipes: they work on texture and structure more than aroma.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whipped with sugar to trap air, giving the sponge its light, airy structure.
Sugar
Whipped with eggs to stabilise foam and add sweetness and tender browning.
Flour
Provides the set structure that holds the sponge together while it rolls.
Baking powder
Releases gas during baking so the thin batter rises and stays light.
Jelly
Adds sweetness, moisture and flavour to the rolled filling.

The step that matters

Roll the cake while it is still warm. Warm sponge is flexible, so it rolls without cracking. Once it cools, the starches and proteins firm up and the cake becomes brittle and prone to splitting.
