Directions

Prepare the jars

  1. Fill glass jars with fresh strawberries and sprinkle with sugar, using ¼ pound of sugar for each pound of berries.

Water bath

  1. Place the jars in a boiler with a little hay at the bottom to prevent breaking.

  2. Fill the boiler with cold water to within 1-2 inches of the tops of the jars.

  3. Boil for 15 minutes.

Remove and seal

  1. Wrap your hand in a towel and carefully remove the jars.

  2. Fill the jars to the top before sealing, using one or more jars for that purpose.

What each ingredient does

Fresh strawberries
Provide the fruit, flavor and bulk of the preserve.
Sugar
Adds sweetness and helps preserve the fruit by binding its water.

The step that matters

Fill the jars to the top before sealing. Air left in the jar can weaken the seal and leave the fruit near the top exposed to spoilage, so the jars should be filled fully before sealing.
