What each ingredient does

Tomatoes
Provide the main body, flavor, and liquid base of the ketchup.
Vinegar
Adds acidity that sharpens flavor and helps preserve the sauce.
Sugar
Adds sweetness that balances the acidity of the tomatoes and vinegar.
Onions
Add savory depth and aroma to the tomato base.

The step that matters

Boil until reduced by half. Long simmering evaporates water and concentrates flavor and thickness. Stopping early leaves the ketchup thin and watery, while overcooking can make it too dense and sticky.

Swap the mace

How well each one fits the dish's main ingredients (tomato, onion, clove, pepper, celery, allspice, sugar):

  1. Cinnamonfits better
  2. Thymefits better
  3. Gingerfits better
  4. Macethe original

Fit is the average pairing score against tomato, onion, clove, pepper, celery, allspice, sugar. Candidates are from the same food group and used in at least 100 recipes.
