Haricot Mutton

Ingredients

Directions

  1. Place the mutton on a cutting board.

  2. Saw off the end of the rib-bone, leaving the cutlet-bone 3 inches long.

  3. Saw off the chine-bone at the back of the cutlets.

  4. Joint each cutlet with a chopper.

  5. Cut off each cutlet with a sharp knife.

  6. Beat each cutlet to about ½ inch thick.

  7. Trim the cutlet round, leaving ½ inch of rib-bone bare.

  8. Shape the cutlets nicely.

  9. Set aside the trimmings for clarifying fat.

  10. Peel and slice the onion.

  11. In a stewpan, combine the onion and cutlets with butter.

  12. Fry the cutlets on a quick fire until light brown, turning to cook evenly.

  13. Remove the cutlets from the stewpan.

  14. Pour off excess grease, leaving the onion; add flour and gradually stir in the stock until boiling.

  15. Strain the sauce and return the cutlets to the stewpan with the sauce.

  16. Wash and scrape the carrot, cutting it into fancy shapes.

  17. Peel and quarter the turnips.
