Ingredients

Directions

Prepare

  1. Wash the potatoes well in cold water.

  2. Peel the potatoes, remove any eyes or black specks, and slice them.

  3. Peel the onions and slice them.

  4. Wash the mutton in cold water and scrape it clean.

  5. Cut the mutton into small pieces.

Layer and stew

  1. In a large saucepan, layer the meat, then potatoes, then onions.

  2. Sprinkle pepper and salt over each layer.

  3. Continue layering until all meat and vegetables are used.

  4. Pour in enough cold water to cover the bottom of the saucepan (about ½ cup).

  5. Place the saucepan on the fire and bring to a boil, then reduce heat and let it stew gently for 1.5 to 2 hours. Stir occasionally to prevent sticking.

  6. Serve the stew hot on a dish.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Starchy body that softens during stewing and thickens the broth slightly.
Mutton
Provides rich meat flavour and tenderises through long, gentle stewing.
Onions
Adds sweetness and aroma as they soften into the stew.

The step that matters

Gentle stewing with occasional stirring. Once boiling, reducing the heat to a gentle stew keeps the meat tender rather than tough. Stirring from time to time prevents the bottom layer from sticking and scorching while the liquid is low.
