Pork Pie

Ingredients

Directions

  1. In a large saucepan, combine ½ cup lard and ½ cup cold water. Heat until boiling, watching carefully to prevent it from boiling over.

  2. Cut 1 pound of lean pork into 1-inch square pieces.

  3. Place 1 pound of flour in a basin. Pour the boiling lard and water mixture into the flour and mix well with a spoon.

  4. Once cool enough, knead the paste until smooth. Do not add more water; it should be stiff.

  5. Transfer the paste to a floured board. Cut off a quarter of the paste and shape the rest into a basin, pressing it evenly.

  6. Trim the top of the paste with a floured knife to make it level.

  7. Dip the pork pieces in cold water and season with pepper and salt. Place them tightly inside the paste basin.

  8. If desired, sprinkle 1 teaspoon of chopped sage among the pork pieces.

  9. Roll out the remaining paste with a floured rolling pin and cut it to fit the top of the pie.

Swap the sage

The recipe marks sage as optional. How well each one fits the dish's main ingredients (pork, pepper, flour, egg):

  1. Jalapenofits about as well
  2. Nutmegfits about as well
  3. Parsleyfits about as well
  4. Sagethe original
