Why it works: Flour and shallot match in chemistry and in kitchens. They rank in the top 6% of all ingredient pairs, and cooks put them together in 2,081 recipes. Both carry isobutyraldehyde, which smells malty, green. The science ↓

Ingredients
Directions
Remove fat from the meat and mince it as fine as possible.
Season the minced meat with pepper and salt.
Chop the sage leaves finely.
Peel and chop the shallot and onion.
Mix the chopped sage, shallot, and onion into the minced meat.
In a bowl, combine the flour, baking powder, salt, and dripping.
Rub the dripping into the flour until well mixed and free of lumps.
Add enough water to form a stiff paste.
Flour a surface and turn out the paste.
Divide the paste in two to avoid overworking it.
Roll each portion into a thin sheet, about ⅛ inch thick.
Cut the paste into squares, approximately 6 inches each.
Collect and re-roll any scraps to make more squares.
Place about 1 tablespoon of the meat mixture in the center of each square.
Fold the paste over the meat and seal the edges.
