Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Giblets
Provide the main meat and rich flavour that the soup is built on.
Second white stock
Forms the liquid base that carries the flavour of the vegetables and giblets.
Clarified butter
Adds fat and richness to the soup.
Flour
Thickens the soup slightly, giving it body.
Madeira
Adds sweetness and depth of aroma to the finished soup.

The step that matters

Skimming during the simmer. Simmering for 2 hours at a gentle boil releases foam and impurities from the giblets; removing them regularly keeps the broth clear and clean-tasting.
