Lobster-Sauce

Ingredients

Directions

  1. Place the lobster on a cutting board.

  2. Use a chopper to break the shell by hitting it with the blade, not the edge.

  3. Remove the shell from the claws and back using your fingers.

  4. Extract all the flesh and cut it into small dice.

  5. If using a hen-lobster, remove the coral from the neck and back.

  6. Wash the coral in cold water in a small basin.
