Semolina Pudding
Ingredients
Directions
Make the semolina base
In a saucepan, combine the milk and crushed semolina.
Heat the saucepan, stirring occasionally until it boils and thickens, then remove from heat.
Add the egg and bake
In a bowl, beat the egg with the moist sugar until combined.
Grease a ¾ pint pie dish with butter.
Once the semolina mixture has cooled, gently stir in the sweetened egg.
Pour the mixture into the greased pie dish.
Grate nutmeg over the top of the mixture.
Bake in a preheated oven at 400°F (200°C) for 15 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Milk
- Forms the liquid base that the semolina thickens into a soft pudding.
- Semolina
- Thickens the milk as it heats, giving the pudding its body and set.
- Egg
- Adds richness and helps the cooled pudding set as it bakes.
- Moist sugar
- Sweetens the pudding and adds a mild molasses flavour.
The step that matters
Cool the semolina before adding the egg. Stirring beaten egg into a very hot semolina mixture can scramble it and leave lumps. Letting the mixture cool first lets the egg blend in smoothly and set evenly in the oven.
Swap the nutmeg
How well each one fits the dish's main ingredients (milk, semolina, egg, sugar, butter):
- Cinnamonfits better
- Nutmegthe original
- Capersfits less well
- Parsleyfits less well
Fit is the average pairing score against milk, semolina, egg, sugar, butter. Candidates are from the same food group and used in at least 100 recipes.
