Why it works: Pepper and sage match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 5,388 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓
Roast Turkey
Ingredients
Directions
The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.
Prepare the turkey
Select a large hen turkey and ensure it is clean and fresh.
Kill the turkey two days before using.
Remove entrails, feathers, and singe carefully; wash and dry with a clean towel.
Salt the inside of the turkey well and place it in a large pan.
Make the stuffing
For stuffing, break up the stale bread and soak it in water or milk.
Beat the soaked bread with a spoon, then add butter, salt, pepper, and spices.
If using onion, chop it finely and brown in hot butter before adding to the stuffing.
Stuff the turkey and sew up the breast.
Roast
Place the turkey in a large baking pan and cover with butter, flour, salt, and pepper.
Preheat the oven to 400°F (200°C) and roast the turkey, basting often, for about two hours.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

What each ingredient does
- Hen turkey
- Provides the main body of meat that is roasted and served.
- Stale bread
- Soaked and beaten to form the bulk and body of the stuffing.
- Butter
- Adds fat and richness to the stuffing and coats the skin for browning.
- Flour (in the method)
- Dusted over the skin, it helps the surface brown and crisp in the oven.
The step that matters
Basting often during roasting. Regular basting moistens the surface and carries melted fat over the skin, which helps it brown evenly and keeps the meat from drying out during the long roast.
Swap the onion
The recipe marks onion as optional. How well each one fits the dish's main ingredients (turkey, bread, milk, egg, butter, pepper, sage):
- Capsicumfits better
- Potatofits better
- Asparagusfits better
- Onionthe original
Fit is the average pairing score against turkey, bread, milk, egg, butter, pepper, sage. Candidates are from the same food group and used in at least 100 recipes.
