Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Dried tongue
Provides the main meaty flavor and the body of the paste.
Butter
Adds richness and moisture, and binds the tongue into a spreadable paste.
Veal
Forms the bulk of the potted layers and adds savory meat flavor.
Mace
Adds a warm, aromatic spice note to the meat.

The step that matters

Press the mixture down hard and pour clarified butter over it.. Pressing firmly pushes out air pockets, and the clarified butter forms a layer that seals the surface against air, which helps the potted meat keep during storage.

Swap the mace

How well each one fits the dish's main ingredients (butter, veal):

  1. Sagefits better
  2. Parsleyfits better
  3. Capersfits better
