To Keep French Beans All the Year
Ingredients
Directions
On a dry day, select young, unblemished beans.
Clean and dry the beans.
In a large stone jar, layer salt and beans alternately until full.
Cover the beans with salt, tie a coarse cloth over them, place a board on top, and add a weight to keep out air.
Store the jar in a dry cellar.
When ready to use, wash the beans thoroughly and soak in soft water for 24 hours, changing the water frequently.
Boil the beans without adding salt.
