Spiced Beef

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the beef

  1. Remove the bone from the beef ribs and rub the meat with saltpetre.

  2. After 3 hours, rub the meat with moist sugar and let it sit for 2 days.

  3. Mix ground pepper, pounded mace, pounded cloves, and cayenne pepper; rub this mixture into the beef, especially into the holes, adding salt as needed.

  4. Roll the meat into a round shape and bind it with a strong string.

Bake and serve

  1. Chop the shredded suet finely and cover the beef with it.

  2. Place 1 cup of water in a baking pan and bake in a moderately heated oven at 350°F (175°C) for 5 to 6 hours.

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef ribs
Provides the main meat, and its fat keeps the cooked beef moist and rich.
Saltpetre
Cures the meat and helps it keep its color and cured flavor.
Moist sugar
Adds sweetness and balances the salt and spices in the cure.
Ground pepper
Adds sharp, aromatic heat to the spice rub on the meat.
Shredded suet
Covers the beef, adding fat that helps keep the surface moist during baking.

The step that matters

Rubbing the spice mixture into the holes. Spices and salt must reach the deepest parts of the meat, since unevenly seasoned areas stay bland or overly salty. Salt draws moisture out and carries flavor inward, so the rub needs time and even coverage to work through the beef.

Swap the mace

How well each one fits the dish's main ingredients (beef, sugar, pepper, clove):

  1. Cinnamonfits better
  2. Allspicefits better
  3. Nutmegfits better
  4. Macethe original

Fit is the average pairing score against beef, sugar, pepper, clove. Candidates are from the same food group and used in at least 100 recipes.
