What each ingredient does

Brisket
The main cut; long cooking softens its tough connective tissue.
Coarse sea salt
Seasons the meat and draws moisture out, helping preserve it during curing.
Saltpetre
Helps preserve the meat and gives cured beef its characteristic pink color.
White wine vinegar
Adds acidity to the brine, sharpening flavor and aiding preservation.
Whole spices
Add aromatic flavor that penetrates the meat during curing.

The step that matters

Let it sit for one week before use.. Salt and cure need time to penetrate thick pieces of meat evenly. Rushing this stage leaves uneven seasoning and weaker preservation.

Swap the nutmeg
