Ingredients

Directions

Prepare

  1. Prepare the goose by drawing, singeing, washing, and wiping it inside and out.

  2. Truss the goose to make it look round and short.

Make the stuffing

  1. In a bowl, mix the bread crumbs, minced onions, sage, salt, pepper, egg(s), and butter to make stuffing.

Roast and serve

  1. Fill the goose with the stuffing and roast it, basting frequently.

  2. Roast for 2 to 3 hours, depending on the size of the goose.

  3. Boil the giblets in water seasoned with salt and pepper.

  4. Add a bit of butter and dredge the giblets with flour.

  5. Mince the liver and gizzard finely, combine with the giblet gravy, and serve in a gravy tureen.

  6. Serve the goose with apple sauce made from steamed, sweetened Jersey apples.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Goose
Its fat renders during roasting, keeping the meat moist and browning the skin.
Bread crumbs
Absorb the butter and juices, giving the stuffing body and a soft texture.
Egg
Binds the stuffing so it holds together rather than crumbling when cooked.
Onions
Add sweetness and aroma as they soften and mellow in the stuffing.
Butter
Adds fat and richness, carrying flavour through the stuffing and giblets.

The step that matters

Basting the goose frequently while it roasts. Basting spreads rendered fat and juices over the skin, helping it brown and crisp and keeping the surface from drying out during the long roast.

Swap the apple

How well each one fits the dish's main ingredients (bread, onion, sage, pepper, egg, butter, flour):

  1. Lemonfits better
  2. Avocadofits better
  3. Limefits better
  4. Applethe original

Fit is the average pairing score against bread, onion, sage, pepper, egg, butter, flour. Candidates are from the same food group and used in at least 100 recipes.
