Why it works: Parsley and nutmeg match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 5,062 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Forcemeat Stuffing

Ingredients

Directions

  1. Finely chop the cold fowl, veal, ham, game, fat bacon, and beef suet.

  2. Mix in the bread crumbs, chopped parsley, white pepper, coarse sea salt, and nutmeg until well combined.

  3. Form the mixture into small balls, no larger than a small nutmeg.

  4. For brown sauce, flour and fry the balls; for white sauce, boil them in water for three minutes.
