Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sour milk
Provides moisture and acidity that reacts with baking soda to help the bread rise.
Baking soda
Reacts with the acid in the sour milk to release gas, lifting the batter.
Syrup
Adds sweetness, moisture, and a deep, molasses-like flavor.
Cornmeal
Gives the bread a coarse, crumbly texture and a slightly grainy bite.
Graham flour
Adds a hearty, nutty flavor and a denser crumb than refined flour.
Wheat flour
Provides structure to hold the loaf together as it cooks.

The step that matters

Get the batter into the pan promptly after mixing the milk and baking soda. Baking soda reacts with the acid in sour milk right away, releasing gas bubbles. Waiting too long lets some of that lift escape before steaming sets the crumb, which can leave the loaf dense.
