Why it works: Flour and butter are a kitchen classic. They rank in the top 12% of all ingredient pairs, and cooks put them together in 124,287 recipes. Both carry isobutyraldehyde, which smells malty, green. The science ↓
Puff Paste
Ingredients
Directions
On a marble slab, place the flour and make a hole in the center.
Add the egg yolks to the hole.
Work the butter in a napkin until free from water.
Add the salt and lemon juice to the flour mixture.
Cut ¼ of the butter into small pieces and mix it into the flour and egg yolks.
Add tepid water gradually until the paste is smooth.
Beat ¼ of the remaining butter to 1 inch thick.
Roll out the paste to four times its original size.
Place the butter in the center of the paste and fold the sides over.
Roll out the dough to three times its original size.
Repeat the folding and rolling process twice, adding more butter each time.
Cover the dough and let it rest for 30 minutes before use.
