Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the pudding

  1. Peel the oranges.

  2. Cut the oranges into pieces and place them in a dish.

  3. Pour the custard over the oranges.

Make the meringue

  1. Whip the egg whites until stiff.

  2. Gradually add the sugar to the egg whites.

  3. Spread the meringue over the top of the pudding.

Bake and serve

  1. Brown the top in a 400°F (200°C) oven.

  2. Serve cold.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Oranges
Provide the main fruit flavour and juicy, tart base of the pudding.
Custard
Forms the creamy, soft body that the oranges are set in.
Egg whites
Whipped into a foam that forms the light, structured meringue topping.
Sugar
Sweetens the meringue and helps it hold its glossy, stable peaks.

The step that matters

Whipping the egg whites until stiff. Egg whites need to be whipped to firm peaks before sugar is added so they trap air. Under-whipped whites deflate in the oven, and adding sugar too early or with fat residue can prevent full volume.

Swap the orange

How well each one fits the dish's main ingredients (egg, sugar):

  1. Vanillafits better
  2. Raisinfits better
  3. Lemonfits better
  4. Orangethe original

Fit is the average pairing score against egg, sugar. Candidates are from the same food group and used in at least 100 recipes.
